In Denmark, “cold bowl” is a very common desert during summer. It is traditionally served with cookies “kammerjunkere” or chrushed dry buns “tvebakker”. Lately is has become normal to serve it with cereals, roasted oats, granola, fresh fruits or cinnamon toasted rye bread.
Here i will give you a healthy version of koldskål that can be used for breakfast, a snack or dessert 🙂
1 frozen banana in cubes
1 1/2 cup buttermilk
1/4 teaspoon ground cardamon
1 Tablespoon lemon juice
Lemon zest and vanilla to taste
cafe Gaya is an Oasis in the middle of Aarhus where you can find vegan food, smoothies, fresh juice, gluten free cake and bread and a relaxing atmosphere. when i visited the place last saturday i experienced it as a yoga space because of the many posters for yoga, the pillow corner, salat bar and Deva premal backgound music. Yesterday, however, i experienced a south American space. Spanish was spoken at all tables except from mine (the man behind the cashier as well), and I noticed that many of the smoothie contained south American ingredients. It is funny how the same place can give you very different experiences depending on when you visit. Nevertheless, both yoga and south / central America has a special place in my heart
This morning I went for a long walk in the area where I grew up.
I love to go for a walk by myself in this area, because it is a big part of who I am. My body moves through the landscape without using braines, and I can find peace in the comfort and beauty of Mother Nature.
Even when I am not physically there, I can close my eyes and hear the sound of the waves softly hidding the shore. I can hear the seaguls, and feel how the wind kisses my cheek with clean and fresh air. I can dissolve into the silence.
I still feel as I know every little corner of the place, every little secret, but this morning I actually did find something I do not remember having seen before. Also I meditated at the beach for the first time. Memories will keep transforming the place.
It is funny, how I am alway searhing for exotic experiences in far away places, and yet can find them right in front of my nose.

Stuffed avocado is an easy way to satisfy both eyes an stomach. Here i have stuffed half of the avocado with about 2 tbsp of cottage cheese mixed with 1 tsp pesto and a bit of chives, the other half is stuffed with refried beans mixed with chives. I served the avocado with salat and a slice of baguette with pesto which has been toasted in the oven.
This year the danish spring has been rather cold. Believe it or not, i am still wearing my winter coat and gloves. The cold weather makes me appreciate the moments of sun that passes my way, therefore i will share with you some of those moments from this weekend 🙂
