Non-mackerel-in-tomato-salat on rye bread



Again i have found a vegetarian solution to a danish smørrebrøds classic.

The mackerel is replaced with young green jackfruit from a can (i imagine that you can also make fried fish, pulled pork or other dishes with this).

I did not use sugar, but added dried thyme
next time i will replace the yoghurt with homemade tofumayo :

12 oz firm silken tofu (drained and padded dry) = 340g
1 tsp apple cider vinegar
1 tsp Dijon mustard
1 Tbsp lemon juice
1 tsp agave syrup or your choice of sweetener
1/2 tsp salt
1/2 tsp white or black ground pepper
1 Tbsp olive oil

Blend and taste if something needs to be added.
If you want to use the mayo for something besides the non-mackerel-salat you can play with adding different herbs such as garlic, chili, dill or chives.



Fried fish the vegetarian way


If you feel like fried fish, i can highly recommend this recipe where the fish is replaced with parsnip:

I used 1,5 dl wheat flour mixed with 0,5 dl coconut flour instead of chickpea flour

I served them with lemon juice and cress, røsti and salat 🙂


Banana icecream with a touch of heaven



For 2 persons

3 frozen bananas 🍌
2 tbsp roasted and chopped a hassel nuts
0,5 vanilla stick
Chopped Chocolat with chili

scrape the vanilla pod of its seeds and choppe the stick finely – we will use both pods and the chopped stick:-)

Blend the bananas until smooth, add the other ingredients shortly so nuts and chocolat maintain some crunchiness.


other flavors:

  • 2 frozen bananas, 2 dates, 2-4 tbsp nutbutter (e.g. mix brazilian nuts and almonds)
  • banana, lemon zest, cardemon, lemon juice

Crackers from sunflower pulp



Sunflower milk: soak 1 cup sunflower seeds in 3 cups water for 12 hours. Blend.
Filter the seeds from water though a thin cloth.

Now you can take the seed pulp which is still wet and mix it with a bit of salt and some thyme. I added coconut pulp as well.
Press the mixture flat, and bake until crisp 🙂 easy

I got 3 large

Rasberry, banana, Vanilla oats


3 tbsp rolled oats
1 tbsp coconut flakes
1 chopped banana
At little vanilla
A small handful rasberries

Put all ingredients in a pot
Add water, you can always add more to get the consistency you want.
Heat all the ingredients, stir so it won’t burn, and smash the bananas.
