Danish inspired vegetarian Christmas dinner


Cranberry sauce
150 g fresh cranberries
2 Tbsp. honey
1/3 cup port

Bring to a boil and let it simmer for 20 minutes.

125 gram cashew nuts
125 gram mushrooms
200 grams dry red lenses. Boil them in 2,5 dl stock
75 gram breadcrumbs
75 gram tomato paste
1 red bell pepper
1 bunch of parsley
1 little onion and 2 garlic cloves fried
2 tsp chili flakes

Blend the ingredients above except for the sauce. Add the mixture to cupcake forms or form it as breads. Brush with cranberry sauce. Heat the oven 200 Celsius. Roast covered for 30 min and thereafter uncovered for 30 min.

1 medium sweet potato – boiled
½ an apple fried until it is soft

Blend the potato and apple and add cinnamon and nutmeg. Roast in the oven for an hour.

1 handful roasted almonds
A little can of coconut cream
2 Tbsp. chia seeds

Let sit in the fridge for at least an hour. Serve with cherry sauce
